Blueberry Vinaigrette

The dressing for the salad was a blueberry vinaigrette. It has been a favorite of mine for a while now and makes a regular appearance in my summer salads.

I love to use whole grains as much as I can, especially in my salads. The texture it adds is amazing. I always bulk cook my grains too. Then they are ready to go in the fridge anytime I need them. For this salad I wanted farro. Are you familiar with this grain yet? It is an ancient grain that has gained a lot of traction recently. Thank heavens, because it is good! It has a great flavor and adds just the right amount of chew to any food.

Cooked farro

Here is my favorite way to cook farro. It takes a little time, so make sure and double or triple to make it batch cooking. It is very simple to reheat!

Ingredients

  • 3 cups vegetable stock You can also use water if you prefer. I like the flavor stock gives it though. If you would rather use a chicken, fish or beef stock, those are great too.
  • 1 cup pearled farro
  • 1 teaspoon salt this is a variable. You can add more or less, depending on preference.

Instructions

  • Bring stock to a boil over medium heat. Add salt and farro. Cover and simmer on low for 25-30 minutes. Remove from heat and let it rest for 5-10 minutes, fluff with fork.
    Serve as desired!
    Leftovers can be stored in the fridge for a week to a week and half. I like to reheat with a little liquid. So, if you are microwaving, place chilled farro in a microwaveable bowl. Add 2 tablespoons of water, cover and microwave on high for for about a minute. If you don't like using microwaves or prefer the cooktop, you can use the same method there. Place farro in pan, add water, cover and simmer until heated.
    Now, sit back and enjoy. Look at how healthy you are!!

Blueberry vinaigrette

This dressing is all you will ever need to a vinaigrette. I promise you will love this.

  • Food processor or blender

Ingredients

  • 3/4 cup fresh blueberries I guess you could use frozen, but it wouldn't have the same consistency or texture.
  • 1/3 cup good quality olive oil
  • 1 tablespoon white lemon balsamic. Link in post. If you don't have the lemon white balsamic, no problem. Any other balsamic will do. Or you could even use a sherry vinegar.
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon minced garlic

Instructions

  • Throw all ingredients in small food processor or blender. Pulse until smooth. This is so good, you could practically drink it. Of course it is best served over a green salad, roasted beets, fruit salad, watermelon, etc. There are so many options.
    Now, sit back and enjoy. You deserve it!
